AVOCADO MOUSSE

  • 3 each Hass Avocados
  • 2 each Persian Limes
  • 2 each Jalapenos, chopped
  • 10 each Beefsteak Tomatoes, chopped in small pieces
  • ¼ c Water
  • Salt to taste

– In a blender add the tomatoes and a large pinch of salt and blend for 20 seconds. Put the puree in a fine mesh strainer with a container on the bottom and let sit for 1 hour to strain. Make sure you don’t push the puree through the strainer because it will get murky and it will oxidize the avocado.

– Put the jalapeno and the water in the blender and blend for 30 seconds. Strain the liquid and reserve.

– Put the avocado pulp, juice of the 2 limes, strained tomato water and some of the jalapeno juice in the blender and season lightly with salt. Blend until smooth and silky.

For a treat your skin will love, serve this as a dipping sauce with shrimp or any other seafood or as a base for a light salad.
